Did you know that Haitian cuisine is one of the most distinctive in the Caribbean? Here are some reasons:

It includes techniques such as “twice-cooking” to maximize flavor and texture.  Haiti’s national dish, Griot (pork dish), is first marinated, then braised, then fried!  

 

 

 

It includes ingredients not commonly found in other Caribbean dishes.  Its world-famous Djon Djon (black rice) is cooked in a black mushroom broth often sprinkled with lima beans!
